This exquisite tea is unique due to its post-fermentation process, which involves microbial fermentation after the leaves are dried and rolled. Like the song, which has come to signal a "break up," "break up tea" refers to physically breaking apart a compressed tea cake, particularly Pu-erh tea. The elaborate production of Pu-erh involves carefully separating the compressed leaves. Like aging fine wine, this process develops rich, complex flavors and enhances potential health benefits. Unlike most teas, Pu-erh is intentionally aged, allowing it to mellow and deepen in flavor.
